Is this your "passion" site...ie do you write all the content yourself, and are you an expert in the field? If it is, then you might want to consider easing off the ads on the front pages, and only use the second / 3rd tier pages for Adsense / affiliate programs. This will drive visitors deeper into your site instead of clicking away immediately.
If it's not your passion site, and you don't really care about the content, then you can start with adsense right away on the front page.
Maybe you can standardize the colors and fonts you're using on the dog page? A bit too much for my eyes...
BTW I can understand what you mean by moving on too fast.
I have the same habit too.
I wouldnt say it's a a bad thing, though. If you're like me, then you're more attracted to the creation phase and you get bored when you're stuck doing the updating / routine jobs on a daily basis. You're not the webmaster type and it's no point trying to be one anyway..
You should probably enlist some freelance help to complete your projects and update it from time to time, and you can focus on creating more sites.
